Experienced Head Chef required for our busy Gastropub check us out on www.thebarn.ie
Please check the website for our Breakfast and Daytime Menu.
Very soon, we will be re-starting our much-loved Dinner Menu to include the finest Irish steak and seafood etc.;
A new Head Chef will arrive in time to innovate and create the new Dinner Menu.
Sponsorship and Work permits for exceptional candidates only can be secured for candidates outside Europe but does take some time to be processed.
(It should be noted UK chefs can work in Ireland without a visa due to a bilateral agreement)

We have a happy organised team looking for a strong leader.
Your role within The Barn:

To ensure that all company systems, procedures and standards are adhered to.
To ensure that all menu items are prepared according to the menu and recipes specification manual.
To ensure that all preparation of foods is carried out according to the menu preparation manual..
To ensure staff rostering.
To ensure that the highest standards of hygiene are maintained.
To have full knowledge of HACCP.
To ensure new staff are trained to the highest possible standard.
To ensure all daily/nightly/weekly cleaning schedules are completed.
To attend training sessions both on job/off job.
To attend all staff meetings.
Train staff to check temperature records.
Ensure all labels are checked - all food on date.
Check daily cleaning duties and closing duties and make a daily end-of-night report regarding staff working hours.
Check wastage and introduce it into the system.
Check par levels and fill up the daily production chart.
Ensure that chefs complete all temperature checks and record them accurately.
To supervise main line stock counts daily to prevent shrinkage.
Ensure all deliveries are checked and signed for,
To record all purchases on the delivery and are logged on our system and check and make sure GRN (computerised) invoices are matching with purchases from suppliers
To physically check the stock weekly and monthly and enter it into the system.
To place daily orders according to business needs and daily sales to ensure fresh products daily and correct rotation of stock.
